We are looking for a chef for our Milton branch which we call, Indian Room Brisbane.

ABOUT THIS ROLE

Planning, designing, and developing authentic Indian menus, incorporating traditional flavours, regional specialities, and seasonal ingredients while ensuring cost-effectiveness.

Estimating food and labour costs, placing orders for spices, produce, and specialty ingredients, and managing stock to support uninterrupted kitchen operations.

Preparing, cooking, and presenting a wide variety of Indian dishes such as curries, tandoori, biryani, and vegetarian delicacies, ensuring authentic taste and consistent quality.

Supervising kitchen staff in the preparation, cooking, and presentation of dishes, ensuring recipes and methods are followed to maintain Indian Room's high standards.

Collaborating with management, dietitians (where relevant), and wait staff to cater to customer requests, dietary requirements, and special cultural or nutritional needs.

Demonstrating and training staff in traditional Indian cooking techniques (e.g., tandoor methods, spice blending, and slow cooking) while introducing new culinary innovations.

Adapting dishes and menus to accommodate vegetarian, vegan, gluten-free, and religious dietary preferences, ensuring inclusivity for diverse customer groups.

Monitoring portion sizes, flavours, and presentation to guarantee consistency and customer satisfaction in every service.

Maintaining strict hygiene, food safety, and cleanliness standards across the kitchen in compliance with Queensland hospitality regulations.

Coordinating kitchen staff schedules, supervising workflow, and providing leadership to create a well-organised and efficient team.

Recruiting, training, and mentoring new kitchen staff to build skills in Indian cooking techniques and uphold the restaurant's culinary reputation.

Preserving, freezing, and storing food products, including traditional spice mixes and sauces, while ensuring freshness and quality.

Managing inventory, minimising food waste, and implementing cost-control measures to support sustainable operations.

Inspecting kitchen operations and enforcing policies regarding personal hygiene, cleanliness, and food handling practices.

Striving to deliver a memorable dining experience by ensuring all dishes reflect authentic Indian flavours and the signature quality of Indian Room.

WHAT WE'RE LOOKING FOR?

We're seeking a passionate and experienced Chef who thrives in a fast-paced kitchen environment and takes pride in delivering consistently high-quality food. The ideal candidate will have prior experience in a similar role, with a strong understanding of food safety and hygiene practices. You will need to be organized, efficient, and capable of maintaining high standards under pressure, while also being a positive team player who is ready to support others during busy service times.

Qualifications & Experience:

Applicants must possess a Certificate IV in Cookery or Diploma in Hospitality Management.

Strong ability to carry out tasks with precision and attention to detail about Indian Cuisine.

Have at least 1 year of previous experience in preparing Indian cuisine.

Ability to lead and inspire a kitchen team, ensuring timely delivery of dishes without compromising authenticity or quality.

Passion for preserving Indian culinary heritage while embracing modern trends and presentation styles.

To ensure smooth and efficient workflow.

Willingness to work flexible hours, including weekends and holidays.

Proven capability to accurately follow instructions.

Strong knowledge of Indian spices, ingredients, and flavor profiles, and the ability to balance and innovate within these traditions.
